Apple Charlotte

  • 1kg cooking apples. Bramleys are best.
  • half a cup of water
  • 25-40g sugar (to taste)
  • 250g soft breadcrumbs from a stale loaf
  • 100g butter
  • 50g caster sugar
  • Method

    Peel, core and slice the apples. Cook in a saucepan with the water and sugar to taste, until the apples are soft and fluffy. Set aside.

    Melt the butter in a deep frying pan and add the breadcrumbs and caster sugar. Stir well to make sure that the breadcrumbs are toasted, until golden and crispy all over, taking care not to burn them.This will take several minutes. Remove from the heat.

    In a large glass bowl make a layer of half of the cooked apple and then a layer of half of the breadcrumbs. Repeat the layers, finishing with a layer of breadcrumbs.
